Not Your Mother's....

Recently, while scrounging the "new" shelves at the library I found Not Your Mother's Casseroles by Faith Durand. Casseroles are great busy day meals especially if they don't include cream of mushroom soup. While I've come across many that I hope to try in the coming busy weeks, I was quick to make the Cinnamon Roll Breakfast Bake. Homemade cinnamon rolls are a breakfast (ok, anytime) favorite but the timing always seems to be an issue.

For this recipe you can use day old Italian or French bread but remove the crust.

A good way to put many of our lovely eggs to use.

It's similar to a strata or baked french toast but with a yummy, wonderful layer of cream cheese dolled up with cinnamon and vanilla.

Bread, custard and a layer of filling.

Another layer of bread...

...and a final layer of custard.

Dust with a bit of cinnamon before baking to make it pretty. As with those handy stratas, it can be made in advance and allowed to rest in the fridge overnight. An updated brunch dish for company to added to your recipe box.

After sleeping late the next morning, brew a pot with your french press, and within an hour this lovely custard-y casserole may grace the table.

Is there a better way to start the day?
